Must try: Tapey ice cream

What could be a better way to beat the heat than to indulge on a tapey ice-cream?

It may be hard to believe how an alcoholic beverage originated from the great mountains of Cordillera could be a dessert, but this was made possible by two passionate entrepreneurs, Girlie Apuntan and Jovielyn Sianen, owners of the Sinner or Saint Café located at Km. 3, the boundary of Baguio City and La Trinidad, Benguet.

The career of these proud Igorotas has grown from catering to only a few friends into serving locals, tourists, foreigners, and celebrities their original recipes of Cordillera-fused food and cakes since July of 2017.

Girlie and Jovielyn’s goal in putting up a café with a modernized Cordilleran cuisine is to promote their culture and their local products in an emerging world.

The rustic vibe is evident upon entering the café but the traditional taste of Cordilleran recipes is undoubtedly their trademark.

Girlie and Jovielyn noticed the fading interests of locals in Cordilleran food while foreign cuisines arise in the city.

Upon finishing their Hotel and Restaurant Management and Culinary courses, the duo worked on remaking the traditional recipes that match with the style of the current generation.

Their best dishes not only entail their love for preserving their culture but also uphold the original taste their traditional cuisine.

In line with the summer heat and vacation feels, tapey ice-cream is a must try when visiting Benguet. The fermented rice used as the main ingredient in making the ice-cream is called sinulad, which has a sweet flavor.

This gave Girlie and Jovielyn the idea to make it an ice-cream.

At first they said they were sceptical of its acceptability but their hesitations turned into joy when their creation was accepted not only by locals, but also by tourists.

It was recognized because of its unique taste and the fact that it is the first time to have such a unique blend of ice cream.

The best thing about the ice cream is its low alcohol content, which gives the customers the pleasure of enjoying the desserts without worries.

However, Girlie reminds that minors who want to taste the ice cream need their parents’ consent.

Cordillera-fused appetizers and cakes are also available to match with the tapey ice cream craze. Pinikpikan Pasta is also available for those who are having doubts with the regular pinikpikan. The Benguet-style shawarma is also a go-to when your taste buds is searching for a different taste but still want the aesthetics of shawarma.

The Kamote Cake is a best-seller along with Matcha Cake and Berry Lover Cake for your guilty pleasure cravings.

There are no better ways to spend summer than to indulge in modern Cordillera-fused cuisine with your family, friends, significant other, or just yourself while enjoying the cool breeze of Baguio City and La Trinidad.
