BCC team to carry PHL flag in international culinary show

NATIONAL FOOD SHOWDOWN CHAMP -- For the first time in the history of this only five-star resort in the highlands, the Baguio Country Club team composed of chefs Crispian Dave Pettoco, Phobe Pocais, and Jayson Cachero emerged as the overall champion in the Chef Wars-Professional Division of the 2017 National Food Showdown in Bacolod last month. The team, presented by BCC General Manager Anthony De Leon, will represent the country in an international competition in Singapore this month.

The Baguio Country Club will represent the country in an international food showdown set in Singapore this year after its culinary team emerged as champion in the “Chef Wars” of the National Food Showdown in Bacolod recently.

BCC made it to the finals and the championship rounds even when its team members, composed of Phobe Pocais, Crispian Dave Pettoco, and Jayson Cachero, were hastily called to practice and represent Luzon in the national competition.

The team bested the representatives from Visayas and Mindanao.

The winning trio was made to prepare appetizers, main course, and dessert based on the four eggs theme, which eventually impressed the panel of well-known judges from the country’s culinary industry.

BCC General Manager Anthony de Leon awarded the certificate of recognition to the award-winning team witnessed by close to 400 employees who gathered during the BCC employees’ general assembly.

Also recognized were coaches Pedro Canlas, Gemma Milagros Padsico, and Arthur Nacuza Sr., including the BCC Food and Beverage Department where the champions work.

Another team from BCC that also won second place in the Luzon leg competition was likewise recognized.

“We always strive for excellence. The years of defeat has not frustrated us, as we continue to prove that we have a world-class team. We did not seek or even provoke this challenge but we rise to this moment for having the best team out of the three main islands in the country,” De Leon said.

While the team was hastily called to prepare for the competition, one of the members said their daily challenging routine at BCC, the only five-star resort in Northern Luzon, has inspired them to showcase their best in culinary.

The winning team, according to their coach, will provide a good challenge to chefs from other countries during the international competition in Singapore, saying that several Filipino chefs are known worldwide for serving some of the most influential leaders in the world.

The National Food Showdown is envisioned to help develop skills along the lines of tourism and the hospitality industry, for participants not only in Manila but also in the rest of the country. Partnering with hosts of regional competitions is intended to help encourage the provinces to compete with their counterparts in the National Capital Region.

Now on its 11th year, the National Food Showdown has grown to be the only nationwide cook-off in the Philippines. Now under the management of Alimentaria, Incorporated, it aims to continue to excite competitors nationwide.
